Rice cooked with plenty of fresh and dried mushrooms.

たっぷりきのこの炊き込みご飯。

The fresh mushrooms are from @mushroompeoplefarm at @geelongcitymarket.

Rice 1.5cups
Organic Soy sauce 2tbsp
Kaokao miso 2tsp
Mirin 2tbsp
Water 260cc

Add fresh mushrooms. Then cook rice.

Top with chopped spring onion. I charred the miso paste to give it a toasted flavour, then added a bit of it.

Our dinner tonight was very simple and felt a bit like Japanese brekky style. But the mushroom rice was very flavourful and had a nice texture. The salmon berry was quite fatty, but it paired well with other simple, flavourful dishes.

Dinner on a day with an almost empty fridge.

There was some chilli-miso pork mince and a boiled egg…

I topped it with the rice. Even this simple pairing is incredibly tasty.

Meatball soup again.

A few changes to the seasonings and ingredients keep it tasty and prevent it from getting boring. This time, I added a bit of miso to both the meatballs and the soup to give it more depth of flavour. I also added some dashi soy sauce to the soup, along with lots of leftover vegetables and dried mushrooms as a natural stock, which made it irresistibly flavourful. Then I tossed in some udon noodles. It was delicious.
