What’s for dinner?

It’s a dish that I cook often.
Chili miso-flavoured pork mice and vegetables are served on noodles or rice. Sometimes, I like to eat them wrapped in flatbread or lettuce.

It's easy to prepare, and you can add any vegetables or herbs from your garden or refrigerator.
The tomato is juicy and sweet now, giving it a bit of freshness 😀Add a dash of sesame oil to give it more umami.

I like to arrange a dish with whatever I have.

久しぶりの麦麹
オーストラリアで購入できる麦は
少し薄皮がついているので若干難しいですが、
なんとか出来上がりました。

ゆっくり約50時間。
3日目の今日は強い香りを放ちながら出麹です。
家中に広がるこの香りが好きで
ずっと嗅いでいたい。
ここまで強いアロマを発する環境に携われるのは、
まさに手作りの特権かと思ってます。
きっと嫌いになることはないでしょう。
これで麦味噌を仕込むのが楽しみ。

“Shiso salt”

It has been pickled in an anzu-su, a liquid made from a by-product of Anzuboshi, which is juice from apricots and salt. Then, it is dried out.

The shiso salt doesn't contain any artificial colour or flavour. It is 100% natural! I love seeing crystalised salt around the surface before I blitz it.
